I discovered Engagement chicken when it was discussed here http://chowhound.chow.com/topics/900916 a couple of weeks ago. It is as delicious as claimed www.glamour.com/magazine/2006/07/engagement-chicken, it is easy, no-fuss, and it works really well for Shabbat.
You can follow the recipe exactly and serve it on Friday evening. But - and this the really great part - you can roast it on Thursday evening, slice it up and put it into a casserole or wrap well in aluminum foil and set it on the blech to serve hot when everyone gets home from Kabbalat Shabbat. Instead of using the herbs as a garnish, I wrapped them in cheesecloth and set them in the bottom of the casserole, then put the meat on top and poured the juices over all.
It's a really delicious chicken dish that "holds" well on the blech.
