Chabad is the only true kosher option. Rabbi and wife are very nice. They even have rooms to rent in their building for future years.
Sandford hall is very near, so that is a good choice for a dorm. You can probably call and explain the situation to get in there.
If vegetarian is an option, 17th is the best option for food and dorm (one year old building) and it is second closest to Chabad and a block away from Hillel. However, my son really appreciated being in the superblock and being part of the engineering floor. 17th has a totally different menu than all the other dorms and is "healthier" All the other cafeteria's serve the same basic menu's
As an FYI, the Costco in St Louis Park has kosher meat and the Byerly's market there has kosher prepared food. It is an upscale market that has a kosher deli etc. They have space inside to eat there in the market. They have been trying to open a small meat restaurant, but have not heard if it opened yet.
