We actually did Rosh Hashana in Copenhagen many years ago. We contacted the shul around a month in advance. They asked us to come into the Jewish Center a few days in advance for a security interview with our passports, and then set us up for meals the entire yomtov. We had an amazing time.
We were only fed lutefisk once. (Just kidding but we did go to one house where we were expected to drink aqavit shots. Tastes like burning caraway seeds.) The airline meal going home was some sort of inedible salted fish.
