Looking for a recipe for a parve holiday apple cake

I have to admit that although I like apple-cinnamon as a combo, I am not wedded to it. In one of the 3 cakes I made, I used MUCH less cinnamon than the recipe called for -- really just a whisper in the inside apples, and none on the top apples -- and I thought that was the best of the 3.
