My personal favorite recipe for the summer is to chop up celery and onions (whatever you have in the house, green, yellow, etc but I don't recommend purple/red since that clashes with the orange of the surimi), chop up the surimi, add mayonnaise and your favorite fish spices. You can also substitute cut up snap peas for the celery.
