For South Asian ingredients, you cannot find a better selection than Kalustyan's on Lexington and 28th. It is not a kosher store but their selection is so vast that they carry many happen-to-be-certified-kosher ingredients. Sorry, but I cannot comment on the curry paste or fish sauce (you can see a list of the brands they carry on their website (fish sauce highly unlikely to be available)).
