I did a carrot-scallion latke. I'm planning on trying a guacamole version (potatoes and avocadoes - but I'm going to leave out the black beans!). I really like Epicurious's potato with porcini mushrooms version.
I'm also a big believer in trial and error in the kitchen. I've done sweet noodle kugel latkes and stuffing latkes. this year I'm trying a wild rice and mushrooms version.
