Okay, since you asked, I will tell you how it turned out. The menu was rolls; humus and veggies to start friday night, then wild rice salad with scallions, walnut oil and dried tart cherries; quinoa chickpea salad with preserved lemons and hearts of palm,; sliced turkey (packed frozen in the suitcase); clementines and brownies. For shabbos lunch we started with guacamole and chips . The rest was the same. The salads were so good that we agreed we would make them again at home. I think that next time I would freeze and take a second protein. That woud have taken up very little additional space. Also, given a location anywhere near a food store would buy fresh salad ingredients too. But it was much better than okay. Thanks, all for you advice.
