Yes, maybe, but there is a reason these fryers cannot legally be used at home. They are dangerous. People like my son who has worked in many commercial kitchens, are trained on how to deal with this type of equipment, are provided with special fire extinguishers and most of these kitchens have automatic sprinklers or other devices to prevent a fire from spreading. Even frying on a stove top in a frying pan can easily result in fires. Every year a number of people start serious fires by kettle deep frying their turkeys. Frying in equipment designed for home use and getting as close as possible seems to me to be preferable to risking the damage a kitchen fire can cause in less than a minute.
