"basically make as many as possible part of the meal and have the others be no prep items." Yes to this. I like the idea of roasting the beets. The gourd (butternut or other squash) can also be roasted & served plain or made into soup. I like to flavor it with cumin, turmeric, ginger & fresh coriander. If too many RH dishes are sweet, I lose my appetite before getting to the main course. PS The fish, complete with head, can be lightly drizzled with olive oil & roasted as well.
