A few years ago I bought the Nordic ware beehive cake mold. I found a recipe, can't remember but I think it came with the mold, and it has become a Rosh Hashona/ Succos tradition. To decorate the beehive I molded bees out of yellow fondant and black food colorant. Not only is the cake delicious but it is a real hit with kids! Here is the recipe. Apple Honey Bundt Cake for Beehive Cake Pan INGREDIENTS: 1 1/3 cups white sugar 1 1/3 cups vegetable oil 2 ¾ eggs 1 cup honey 1 ¼ teaspoons vanilla extract 3 1/3 cups all-purpose flour 1 ¼ teaspoon baking powder 1 ¼ teaspoon baking soda 1 ¼ teaspoon salt 1 ½ teaspoon ground cinnamon 6-8 apples - peeled, cored and shredded DIRECTIONS: 1. Preheat the oven to 300 degrees F. Grease and flour Bee Hive cake pan. 2. In a med bowl, sift together flour, baking powder, baking soda, salt, and cinnamon and set aside. In a large bowl beat together oil, and sugar, scraping bowl often. Add in the eggs one at a time blending well after each addition. Stir in honey and vanilla. Reduce speed to low and gradually add flour mixture mixing just until blended. Fold in the apples. Divide batter evenly between the 2 sides spreading batter to touch sides of pan so batter is lower in the center. 3. Bake for 50 to 65 minutes in the preheated oven, or until a toothpick inserted into the crown comes out clean. Let cool for 10 to 15 minutes before inverting onto a plate and tapping out of the pan. Buttercream Frosting 1 ½ cups icing sugar 1/3 cup margarine 1-2 tbsp. of liquid, orange juice, or apple juice ¼ tsp. vanilla In medium bowl combine the sugar, margarine, liquid and vanilla. Beat until light and fluffy adding additional liquid if necessary. Cover with a damp paper towel or wrap in saran and refrigerate until needed. Honey Icing 1 ½ cups icing sugar 1 tbsp. honey 1-3 tbsp. liquid – juice or any other liquid In med bowl combine 3 ingredients and blend well till icing is the consistency of thick cream. Royal Icing Bees - Note: I made the bees out of fondant and used the gel black food colorant to do the eyes and stripes 1 tbsp. meringue powder 1 ¼ cups icing sugar 2 tbsp water Yellow and black food colorant In a small bowl combine meringue powder, icing sugar and water. Beat on med speed for 5 min until icing forms stiff peaks. Divide into 3. 1/3 white, 1/3 black, 1/3 yellow. Fill a piping bag with a no. 3 tip with black icing. Pipe bodies and head of bees on to parchment paper. Let set 10 min. Fill piping bag with a no. 1 tip with yellow icing and pipe stripes on bees. Fill piping bag with no. 3 tip with white icing. Pipe wings on bees. Let stand 2 hours till hardened. I couldn't locate my picture of the cake but if you google the cake on Martha Stewart's site you will get an idea of what the finished product looks like.
