I found huge variations in packages of the ribs. The contents of the packages are wildly inconsistent. The problem is that you can't see what you're getting. When I go to the butcher I don't just randomly take the first package of ribs (or whatever meat I'm getting) in the case - there are qualities I look for such as bone to meat ratio, percentage of fat, marbling, etc. With the Meal Mart package it's a blind item.
To be honest, I've stopped buying those delicious Corky's BBQ ribs that the yeshivah from Nashville sells periodically, for the same reason. The first time I ordered them the ones I got were perfect, though others on this board complained about the lack of meat on theirs. My subsequent orders weren't as good, and it became too much money to risk if I couldn't select them myself.
