Breadsmith in Brooklyn

The kosher location in Potomac, which I've visited when I was in the Silver Spring/Baltimore area, is kosher parve, pas yisroel, shomer shabbos. I'd assume that on Avenue M of all places it would be the same way. Ironically, this bakery is opening up right by Kaff's Bakery, although I don't think there's going to be too much competition, since the bakeries are so dramatically different and appeal to two different markets. Breadsmith would be the only artisan bakery in our neck of the woods period, with the exception of a non-kosher Panera in Kings Plaza, and I'm hoping this Breadsmith will be a kosher establishment that will appeal to a broad demographic. What I'm anticipating is that they may be owned by non-Jews and fall under the supervision of Rabbi Aaron Mehlman, which would allow them to be open on shabbos (and would also eliminate the need to worry about hafrashat challah). The fact that any baking done on shabbos would be done in ovens turned on and left on before shabbos by a mashgiach would render such bread pas yisroel.
