The very best carbonara I have ever had was in a vegetarian restaurant in Napa, called Ubuntu, now closed. The chef smoked black trumpet mushrooms,after soaking them in a sugar solution, and crumbled them into the carbonara.
It was absurdly delicious. Try it.
