I don't have a good answer to your question, but I have noticed that Pomegranate has sustained their excellent selection of cheeses. A few of the artisanal cheeses that I liked (very stinky, yummy, moldy cheese) did not seem to be sufficiently popular and disappeared. But overall they seem to be selling good quality fine cheese. So hopefully this is a sign that consumers are taking note; perhaps the demand will spill over to other kosher markets.
