To report back - food on the UK kosher list was widely available in local markets around Scotland, and we had an easy time finding various packaged foods. Mark's Deli in Glasgow is open in a temporary location due to a fire, and has less in the way of prepared food than they apparently originally do; Mark himself was very friendly and helpful. We never made it to the Glasgow kosher restaurant. The Indian restaurant under the hechsher of the rabbi in Edinburgh is delicious, fairly expensive, and only takes cash.
